SWEET AND SOUR CHICKEN 6 boneless chicken breasts, cut in strips 1/4 c. cooking oil 1 (20 oz.) can pineapple chunks 1 large green pepper, cut in strips 4 carrots, cut in small strips Sweet and Sour Sauce: 3/4 c. sugar 1/4 c. soy sauce 4 Tbsp. cornstarch 2/3 c. water 1/2 c. vinegar 1/8 tsp. ginger Brown chicken in oil until brown; salt slightly. Drain and remove from pan. Add pineapple, green pepper and carrots and stir-fry over medium heat until pepper has changed color. Add chicken and Sweet and Sour Sauce and simmer over low heat for 10 minutes. Serve over rice. Sweet and Sour Sauce: Combine sugar, soy sauce, corn- starch, water, vinegar and ginger in saucepan and heat until thickened.
