SHRIMP ALFREDO 2 lb. shrimp, shelled and deveined 1 stick butter 2 tsp. minced shallots 3/4 c. grated Italian cheese 1/2 tsp. minced garlic 2 tsp. parsley 1 pt. half and half 4 egg yolks 1 lb. fettuccine In a large skillet cook shrimp, shallots, garlic in butter over moderate heat, stirring 3 to 4 minutes until shrimp is firm and pink. Reduce heat to low. Cook fettuccine al dente and add to shrimp. In a bowl beat lightly the egg yolks, half and half and cheese. Add to shrimp. Stir 3 to 4 minutes until thickened. Do not boil. Add salt and pepper and serve hot. Makes 4 servings.
