CHICKEN BREASTS A LA LICHTER 8 (3 oz.) chicken breasts 8 Tbsp. flour 1 c. clarified butter 4 tsp. chopped chives pinch of each: oregano, thyme, salt, garlic powder and pepper 4 Tbsp. Parmesan cheese Remove all skin and bone from chicken breasts. Mix together in small brown paper bag: flour, thyme, garlic powder, salt and pepper. Shake chicken breasts vigorously in bag with dry ingredients. Place well dusted chicken breasts in small casserole and pour clarified butter over top of breasts. Bake uncovered at 450 degrees for about 20 minutes or until done. Before serving sprinkle chives and Parmesan cheese over tops of chicken and serve immediately. Makes 4 good portions.
