BEEF ROAST flour salt and pepper to taste 1 (4 to 5 lb.) beef roast 1 onion Combine flour and seasonings. Rub roast with seasoned flour. Place on rack in baking pan. Add water to depth of 2-inches. Bake in 350 degrees oven until tender. Add additional water as needed to prevent sticking. Add onion during last hour of cooking. Remove roast to serving platter. Make gravy using pan drippings.
