OVEN BAKED CHICKEN PARMESAN 1 c. freshly grated Parmesan cheese 1/2 c. flour 1 tsp. dried oregano or Italian seasoning 1/2 tsp. freshly ground pepper 2 eggs 2 Tbsp. water 1 (4 lb.) chicken, cut up or 4 lb. assorted pieces 3 Tbsp. butter Preheat oven to 350 degrees. Stir and toss together the cheese, flour, herbs and pepper; then dump out onto a pie plate or shallow platter. Beat the eggs and water together. One at a time, dip each chicken piece into the eggs mixture, shake off the excess, then roll in the cheese mixture. Arrange in a single layer in a baking dish (a 13 x 9-inch pan will hold it comfortably). Dot each piece of chicken with 1 teaspoon of butter. Bake for 1 hour, until chicken is cooked thoroughly. This is also good an hour or two later, after the chicken has cooled to room temperature.
