SCALLOPS, VENETIAN 1 lb. bay scallops 6 Tbsp. melted butter salt pepper from mill lemon juice 1 c. bread crumbs made from Italian bread 1 large clove garlic 1/4 c. chopped parsley 3 Tbsp. olive oil Stir-fry the scallops 1 minute in olive oil. Season them. Butter a small baking dish and transfer the scallops to it. Sprinkle with lemon juice. Mix the bread crumbs, garlic and parsley; sprinkle over the scallops. Baste generously with the melted butter and broil 4-inches from broiler element until the crumbs turn golden. Serve with lemon wedges. (Two portions.)
