SLOW OVEN BEEF STEW

2 lb. beef, cut in 1 1/2-inch
pieces
2 medium onions, cut in
eighths
3 stalks celery, cut in pieces
4 carrots, cut in pieces
1 c. tomato juice
1/3 c. tapioca
1 tsp. salt
1/4 tsp. pepper
3 medium potatoes, cut in
slices 1/4-inch thick

Combine meat, onions, celery, carrots, tomato juice,
tapioca, salt and pepper in casserole. Cover and cook in 300 degrees
oven for 2 1/2 hours. add potatoes and continue cooking,
covered, 1 hour or until meat and vegetables are done, stirring
occasionally.
