PEACHY CHICKEN

6 chicken breasts or pieces
flour
butter
1 1/2 c. orange juice
2 Tbsp. vinegar
2 Tbsp. brown sugar
1 tsp. dried sweet basil
1/2 tsp. nutmeg
1 can peach halves or
apricots, drained

Dredge chicken in flour; brown in butter. Place chicken
in a casserole. Mix orange juice and spices together; pour
over chicken. Cover and bake at 350 degrees until tender. About 10
minutes prior to serving, add peaches to heat. Serve chicken
with rice. The sweet-sour juice makes a delicious sauce for
rice and chicken.
Note: This recipe can be done a week in advance without
peaches and frozen.
