LASAGNA 2 (12 oz.) cottage cheese 1 or 2 eggs 12 oz. Mozzarella cheese, grated or whole grated Parmesan cheese 1 large pkg. lasagna noodles 2 lb. ground beef 1 onion salt and pepper 1 Tbsp. bell pepper instant minced garlic Italian seasoning 3 (8 oz.) cans tomato sauce 1 lb. can tomatoes Brown ground beef, onion, bell pepper, salt and pepper until onions are transparent. Add minced garlic, Italian seasoning, tomato sauce and tomatoes. Simmer 1 hour or longer, stir often. Spoon off grease while cooking. (Meat sauce must be thick.) Cook lasagna noodles until done. Mix low-fat cottage cheese and egg, one to each 12 ounce cottage cheese, grate Parmesan cheese and grate Mozzarella cheese. In an oblong dish layer ground beef, spread thin in bottom of pan. Cover with noodles. Spread cottage cheese over noodles, Parmesan cheese over cottage cheese. Continue to layer, ending up with meat sauce on top. Pour all Mozzarella cheese on top. Bake at 350 degrees for 30 minutes or until done.
