BENIHANA FRIED RICE (Japan) 2 eggs 2 pieces scallion 3 medium size mushrooms 1/2 tsp. salt 3 tsp. soy sauce (Kikkoman) 1 tsp. butter pinch of black pepper 2 c. rice Cook rice according to directions on the package. Cut the scallions and mushrooms into small pieces. Saute scallions and mushrooms in butter. Add eggs. Continue cooking until the eggs are not moist. Add rice, salt, pepper and soy sauce. Mix well. Optional: Cubed ham, chicken, bacon or hamburg can be added for a complete meal.
