SOLE WALESKA 1 lb. filet of sole 1 lb. shrimp 1 lb. crabmeat 8 oz. Swiss cheese 1 pt. half and half cream 1 (7 oz.) pkg. mushrooms wine Poach filets. Fold filets with skin inside. Salt and pepper. Place in buttered pan with wine and cook in oven. Remove to a silver platter. Spread cooked shrimp, crabmeat and sauteed mushrooms on top. Sprinkle with chopped parsley. Make sauce by combining cream with white wine, with roux of flour and butter. Sprinkle with grated cheese and paprika. Put in 400 degrees oven for 5 or 10 minutes. Border with mashed potatoes.
