KING'S RANCH CASSEROLE (King's Ranch, Texas) 1 frying chicken 1 doz. corn tortillas 1 medium onion, chopped 2 c. grated cheese Sauce: 1 can cream of mushroom soup 1/2 c. chicken broth 1/2 can Ro-Tel tomato sauce (can substitute Ortega) Chicken should be cooked in lightly salted water, boned and cut up. Tortillas should be cut into quarters. Sauce: Combine sauce ingredients and blend until smooth. Layer into 2 1/2-quart casserole/baking dish: 1/2 chicken, 1/2 tortillas and 1/2 onion. Repeat. End up with grated cheese and sauce. Bake, uncovered, in 325 degrees to 350 degrees oven for 45 to 60 minutes. Use more cheese, if desired. Can add 1/2 pint sour cream.
