SWEET POTATO CASSEROLE 3 to 4 lb. sweet potatoes, boiled in skins and drained butter milk salt to taste cinnamon, allspice, walnuts and cloves (ground) (optional) Filling: 1/4 lb. butter 1 egg 3/4 c. brown sugar 3 oz. bourbon 1 c. miniature marshmallows or 10 regular marshmallows Peel and mash potatoes. Add butter, milk and salt. Spread sweet potatoes in a buttered 2 quart casserole. Scoop a 1 inch deep hollow in center, leaving 1 inch rim around the edge. Cook 1/4 pound butter, egg, brown sugar and bourbon until thickened on a double boiler, stirring constantly. Pour syrup into center and over top of sweet potatoes. Place marshmallows around the edge and bake 45 minutes in 350 degrees oven. Variations: Add any: cinnamon, walnuts, allspice, ground cloves to sweet potato mixture.
