PASTA ALLE VONGOLE (Quick Pasta In Clam Sauce) 1/2 c. chopped onions 1 sweet green pepper, seeded and chopped 4 cloves garlic, finely chopped 2 Tbsp. olive oil 1/2 lb. sliced mushrooms 2 (6 or 7 oz. each) cans minced clams, drained and liquid reserved separately 2 Tbsp. chopped parsley salt and pepper to taste pasta Saute onion, green pepper, salt, pepper and garlic in oil until softened. Add mushrooms and cook, covered, for 3 minutes. Meanwhile, prepare 1 to 1 1/2 pounds pasta (egg noodles are the best) which is 1 regular box egg noodles. Prepare according to cooking directions. Add clam liquid to onion, pepper, garlic and mushroom mixture. Simmer 2 minutes. Stir in clams and heat 1 minute. Toss egg noodles with extra olive oil. Add clam mix- ture. Toss. Serve with Parmesan cheese on top.
