CALIFORNIA COMPANY CORNISH GAME HENS (Or It's So Simple It's Illegal) 2 Cornish game hens, cut in halves 1 onion, chopped 2 c. cooked rice 1/2 c. celery, diced 1 tsp. salt 1/8 tsp. pepper 8 oz. can mushroom pieces Salt hens, both sides. Mix celery, onions, mushrooms and rice together. Heap rice in 4 mounds in a baking dish. Place 1/2 hen, skin side up, over each mound. Cover with foil. Bake at 350 degrees for 1 hour. Remove foil. Bake until browned.
