BROCCOLI QUICHE 8 slices bacon (fried crisp) 1 (10 oz.) pkg. chopped broccoli 1 small onion, diced 1/2 lb. baby Swiss cheese, grated 4 eggs 1/2 c. coffee cream Line a 9-inch pie pan or quiche dish with pastry of your choice. Bake a few minutes. Line the bottom with 1/2 the crumbled bacon. Bring broccoli and onion to a boil in lightly salted water. Drain immediately and blot with a paper towel. Layer onion and broccoli over bacon; saving a few pieces of broccoli for garnish. Beat eggs and cream until foamy. Top onion and broccoli with half of the grated cheese. Pour all the egg mixture over the cheese. Add remaining cheese and garnish with the remaining bacon and broccoli. Bake at 350 degrees for 30 to 40 minutes.
