LAYERED BEEF AND CABBAGE CASSEROLE 1 large head cabbage 1/4 c. salad oil 3/4 tsp. salt 1 lb. ground beef 1 small onion, minced 1 (32 oz.) spaghetti sauce 1 c. water 1/3 c. regular rice 1 (8 oz.) pkg. Mozzarella cheese, shredded Shred cabbage (long strips). Cook cabbage in oil and salt. Stir over medium heat until tender (approximately 10 minutes). Fry ground beef and onion, well browned, and add sauce, water and rice. Heat to boiling. Reduce and simmer 20 minutes until rice is tender. Preheat oven to 350 degrees. In a 13 x 9-inch baking dish, spoon 1/2 cup meat sauce. Top with 1/2 cabbage and meat sauce and 1/2 cheese. Repeat layers, cabbage, sauce and cheese. Bake 20 minutes until heated through. Serves 8. Note: One tablespoon sugar can be added to sauce.
