RED BEANS AND RICE

1 lb. dry red kidney beans
1 lb. smoked sausage
1/4 c. chopped onion
1/4 c. chopped green pepper
1 clove garlic
1/8 tsp. celery seed
1/8 tsp. black pepper
1/2 tsp. Tabasco sauce
1/4 tsp. cayenne pepper
1/2 tsp. crushed oregano
1/4 tsp. salt
2 bay leaves
1/2 c. uncooked rice

Soak beans according to package directions. Do not
change water before cooking. Add remaining ingredients except
rice. Cook slowly until beans begin to break down and broth
begins to thicken. Add rice and cook 30 minutes more. (Rice
may be cooked separately and beans served over rice.)
