AMERICANIZED AFRICAN CHICKEN 2/3 c. chopped onions 2/3 c. diced green pepper 2 Tbsp. butter or margarine 2 to 3 c. cooked chicken, cut in medium size pieces 2 c. tomatoes, 1 can 1 (8 oz.) can tomato sauce 1/2 c. chicken broth 1 1/2 tsp. salt 1 1/2 tsp. garlic salt 1/4 tsp. pepper 1/4 tsp. thyme 1/4 tsp. crushed red pepper 1 tsp. ground ginger Onion Rice: 1/4 c. chopped onion 1 c. uncooked rice 1 Tbsp. butter or margarine 2 c. chicken broth 1 tsp. salt Saute onions and green peppers in butter. Add chicken, cook 2 minutes longer. Add remaining ingredients, cover and simmer 20 minutes. Serve over onion rice. Onion Rice: Saute onion and rice in butter until golden. Add broth and salt. Bring to a boil, stir once, cover, reduce heat and simmer 15 minutes or until liquid is absorbed. Makes 5 to 6 servings. My family's favorite dish.
