ZUCCHINI PANCAKES 1/2 c. Bisquick or pancake mix 1/4 c. grated Parmesan cheese (optional) 1/8 tsp. pepper 2 slightly beaten eggs 2 c. shredded, unpared zucchini 2 Tbsp. melted butter or margarine In mixing bowl, stir together pancake mix, cheese and pepper. Stir in beaten eggs and melted butter just until mixture is moistened. Fold in zucchini. In large oiled skillet, pour 2 tablespoons for each round. Cook about 2 or 3 minutes on each side or until golden brown. Be sure they are golden brown before turning. Makes about 12 rounds. This batter freezes well.
