EGG FOO YOUNG 1/2 lb. bean sprouts 8 to 10 eggs 1/2 to 1 c. flour chopped onion, celery, mushrooms, bell peppers, bit of crisp bacon or ham (amounts depend on how many you're serving) Coat bean sprouts with flour. Add chopped ingredients. Beat the eggs until frothy and mix with the flour coated ingredients. Spoon onto hot frying pan or grill and fry like pancakes. Serve with brown gravy of any kind, soy sauce and hot mustard (Chinese style hot mustard).
