CAJUN CHICKEN CASSEROLE

2 c. diced chicken (white
meat)
2 c. canned tomatoes,
undrained
1 c. cooked brown rice
1/2 c. chopped onion
1/2 c. minced celery
1/2 c. red or green pepper
1/2 c. cubed yellow squash
1 clove garlic, minced
1/4 tsp. dried thyme
1/4 tsp. red pepper
1/4 tsp. ground cloves
1/4 tsp. allspice
6 Tbsp. Italian seasoned bread
crumbs

Layer ingredients in casserole with bread crumbs on top.
Bake uncovered in preheated oven at 350 degrees for 35 to 40 minutes.
Makes 6 servings.
