BANGKOK FRIED RICE

1 c. rice (regular rice, no
quick rice)
1 lb. ground beef
1 small onion, chopped
1 tomato, chopped
2 Tbsp. English peas
La Choy soy sauce
2 large eggs
black pepper
salt

Steam rice first for 20 minutes (1 cup rice, 1/2 cup
water). Then put 2 spoonfuls of corn oil and 1/4 stick marga-
rine in a frying pan. Heat until butter melts. Then add
ground beef, chopped onion, black pepper and salt. Fry about 3
to 4 minutes. Add 2 eggs, beaten with a spoon like an omelet.
Add tomatoes, peas, rice and soy sauce. Stir-fry about 4
minutes. Then taste to see if you have enough salt, pepper and
soy sauce. Serves 2.
