STUFFED PASTA SHELLS

1/2 c. chopped onion
1/2 tsp. minced garlic
1/2 lb. hamburger
1 (15 oz.) tomato sauce
1 (6 oz.) tomato paste
1/2 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1 1/2 c. cottage cheese
1 large egg
1/4 c. Parmesan cheese
2 Tbsp. parsley
few grains nutmeg
4 oz. jumbo macaroni shells,
cooked and drained

In large skillet over medium heat, cook hamburger,
garlic and onion; cook 5 minutes to break up meat and until
onion is soft. Drain off fat. Add tomato sauce, tomato paste,
salt, oregano and pepper; bring to a simmer and cook 15 min-
utes.
Meanwhile, combine cheeses, egg, parsley and nutmeg;
heat oven to 350 degrees. Spread 2 1/2 cups tomato sauce in oblong
pan. Using teaspoon, stuff each shell with cheese mixture.
Arrange shells in pan; spoon remaining sauce over each shell.
Bake 20 to 30 minutes until bubbly.
