SWEET AND SOUR RIBS 1/4 c. flour 1/4 c. sugar 1/2 tsp. salt 1/4 tsp. pepper 2 lb. beef short ribs 1 c. sliced onion 1/2 c. catsup 2 Tbsp. soy sauce 1 Tbsp. Worcestershire sauce 1 Tbsp. vinegar 1/2 c. water Cut beef short ribs into 2-inch lengths. Combine flour, sugar, salt and pepper on wax paper. Roll ribs in the mixture, coating them on all sides and shaking off excess. Arrange ribs in a baking dish or pan in a single layer. Layer onions over the ribs. Combine catsup, soy sauce, Worcestershire sauce, vinegar, and water in a small bowl; pour over ribs. Braise, covered, in a moderate oven (325 degrees) for 1 1/2 hours, basting occasionally with pan sauce. Uncover. Continue cooking for 1 1/2 hours longer or until ribs are glazed and very tender.
