FETTUCINI ALFREDO 1 lb. fettucini 1 1/2 c. half and half 5 Tbsp. butter pinch of ground nutmeg 1/4 tsp. black pepper 1 c. Parmesan cheese, grated and divided Cook fettucini, while it is cooking, bring the half and half to a boil in a 12-inch skillet. Reduce heat and let simmer, stirring constantly for 5 minutes. Remove from heat. Drain fettucini and add to the half and half in the skillet. Over low heat, toss well and add butter, nutmeg, pepper and 3/4 cup of cheese. Toss again to mix cheese evenly. Serve hot and use remaining cheese at the table for over top of fettucini. Serves 4.
