ZUCCHINI CASSEROLE 6 c. sliced zucchini 1/4 c. chopped onion 1 can cream of chicken soup 1 c. sour cream 1 c. grated mild Cheddar cheese 1 c. butter or margarine 1 small pkg. Stove Top stuffing mix Cover zucchini and onions with water, bring to a boil. Boil 5 minutes; drain well. Stir together soup, sour cream and cheese; add zucchini and onions stirring gently. Melt butter, crush dry stuffing mix. Stir stuffing and seasoning mix into butter; place 1/2 stuffing mix into casserole dish. Put zucchini mixture in and cover with remaining stuffing. Cover dish. Bake at 350 degrees for 30 minutes. Serves 6 to 8 people.
