SMOKED PORK CHOPS ON A POTATO-APPLE BED (Casserole) 6 c. peeled, sliced potatoes 1 c. peeled, sliced apples 1 Tbsp. diced onion 1 c. grated Swiss cheese (can substitute Cheddar) 6 smoked pork chops Preheat oven to 350 degrees. Boil potatoes until tender, about 10 minutes. Grease a 9 x 13-inch baking dish. Combine pota- toes, apples and onion; spoon into dish. Sprinkle cheese on top. Sear the pork chops by rubbing the fatty ends of the chops around a hot frypan. Then lay in pan to brown on both sides. Place pork chops on potatoes. Cover dish lightly with foil and bake for 30 minutes. Then uncover and bake for 30 more minutes.
