CALLALOO 8 c. water 1/2 lb. salted meat (beef or pork) 8 live crab (optional) 1/2 c. lemon juice 2 (10 oz.) pkg. frozen spinach 2 (10 oz.) pkg. frozen okra 1 c. chopped tomatoes (optional) 1/2 c. chopped onion 2 cloves garlic, finely minced 6 Tbsp. butter Place water and salted meat in large Dutch oven. Bring to a rapid boil. Cover and simmer until meat is tender, about 1 hour. Place crabs in colander, sprinkle with lemon juice and let stand until meat is done. When meat is done, chop fine and set aside. Place crab in same Dutch oven, cover and boil until crab turns pink, 10 minutes. Add spinach, okra, onion, toma- toes and garlic. Simmer for 20 minutes. Remove crabs with slotted spoon and set aside. Add butter to pot and stir mixture well. Remove from heat. Place mixture in blender, cover and blend until smooth. Return mixture to pot and add meat and crabs. Heat and stir. Serves 10.
