MEXICAN TURKEY CASSEROLE 1 1/2 lb. turkey tenderloin, cut in cubes 1/2 tsp. chili powder 1 can cream of mushroom soup 1 can tomato soup 1/2 c. chopped celery 1 bell pepper, diced 1 c. plain yogurt 3 c. cooked white rice 1 medium onion, diced 2 c. grated cheese (Jack and Cheddar) 2 c. seedless red grapes 1 small can mushrooms 1/3 c. salsa nacho flavored tortilla chips, crushed Brown turkey with chili powder and onion. Combine all other ingredients; stir thoroughly. Add turkey and onion mix. Pour into 3 quart casserole. Crush Doritos on top and bake at 350 degrees for 50 to 60 minutes. Serve over white rice. Note: Adjust spiciness to taste. I use mild salsa. Serves 8 to 10.
