VEAL CHOP DINNER 4 loin veal chops (1/2-inch thick) 2 Tbsp. shortening 1/3 c. grated Parmesan cheese 4 medium potatoes, sliced thin 3 beef bouillon cubes 1 Tbsp. lemon juice 2 Tbsp. flour 1/4 tsp. pepper 1/2 tsp. salt 2 medium onions, sliced thin 3/4 c. hot water Coat veal chops with flour; brown slowly in large skillet on both sides in hot shortening. Combine cheese, salt and pepper. Sprinkle 2 tablespoons of the mixture over the meat. Cover with potato slices, sprinkle with 2 tablespoons more of cheese mixture. Add onion slices and sprinkle with remaining cheese. Dissolve bouillon cubes in hot water; add lemon juice. Pour over meat and potatoes. Cover; simmer about 40 minutes or until meat and vegetables are done. Serves 4. This is great for an electric frypan!
