COUNTRY SAUSAGE AND SCALLOPED POTATOES 1 lb. smoked sausage (Hillshire Farm), cut in 1/2-inch pieces 1 large onion, chopped 1 Tbsp. vegetable oil 1 pkg. Betty Crocker scalloped potatoes 2 1/2 c. hot water 1/4 tsp. pepper 1 (10 oz.) pkg. frozen carrots (round pieces) 1 (10 oz.) pkg. frozen chopped broccoli 1 c. shredded Cheddar cheese Cook and stir sausage and onion in oil, in 10 or 12-inch skillet until onion is tender, about 5 minutes. Stir in potatoes, then sauce mix, water and pepper. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally for 10 minutes. Stir in carrots; cover and simmer about 10 minutes. Stir in broccoli and cheese and simmer 10 minutes, then it is finished. Makes 4 or 5 servings.
