BAKED CONTINENTAL CATFISH 12 catfish filets or 6 catfish 1 tsp. salt dash of pepper 1 c. chopped parsley (fresh) 1/2 c. margarine or butter, softened 3 Tbsp. oil 1 egg, beaten 1/2 c. milk 1 tsp. salt 3/4 c. dry bread crumbs 1/2 c. grated Swiss cheese Sprinkle catfish inside and outside with salt and pepper. Add parsley to butter and mix thoroughly. Spread mixture on one filet and top with one other filet, using approximately one tablespoon parsley butter. (If using whole catfish, just put mixture inside the fish.) Combine egg, milk and salt. Combine bread crumbs and cheese. Dip catfish in egg mixture. Be very careful to keep parsley mixture securely inside fish. Then dip catfish in bread crumb mixture. Place on a well greased cookie sheet, 15 1/2 x 12-inches. Sprinkle remaining crumb mixture over top of catfish. Drizzle with oil. Bake in an extremely hot oven, 500 degrees for 15 to 20 minutes or until catfish flakes easily when tested with a fork.
