(GREEK) FLOUNDER AND SPINACH 1 lb. flounder fillet 1/4 lb. Feta cheese 1 lb. spinach or 1 pkg. frozen spinach 1 tsp. crushed garlic pinch of pepper 2 Tbsp. butter Cook spinach, drain water, add 1 tablespoon butter, garlic, Feta cheese and pepper. Simmer a few minutes. Layer 1/2 the fillets in baking dish. Add layer of spinach mixture then another layer of flounder fillets. Melt 1 tablespoon butter, pour over fish. Sprinkle with paprika. Bake at 350 degrees for approximately 20 minutes.
