JAMAICAN BEEF PATTIES (Native Dish) Pastry: 4 c. flour 1 Tbsp. curry 1 tsp. salt 1/2 lb. shortening Sift together flour, curry and salt. Work in shortening and enough iced water to hold dough together. Refrigerate in foil for 12 hours. Remove 15 minutes before use. Roll out and cut into 6-inch circles. Flour each and stack. Cover with damp cloth. Filling: 2 onions 2 oz. escallions 2 hot peppers 2 lb. ground beef 2 oz. oil 1/2 lb. bread crumbs 3 sprigs thyme 2 Tbsp. curry powder 1 Tbsp. salt 1 c. water Mince onions, escallions and hot peppers. Add this to ground beef. Heat oil in frying pan and add ground beef mixture; stir for 10 minutes. Add bread crumbs, thyme, curry powder and salt. Mix well, then add water. Simmer for 1/2 hour. Cool. Fill the prepared pastry circles with filling. Fold over and seal by crimping edges with fork. Bake on ungreased baking sheets in preheated oven at 400 degrees for 30 to 35 minutes until brown. Serve hot. Makes approximately 3 dozen.
