SCALLOPED POTATOES AND HAMBURGER (Or Franks) 8 frankfurters or 1 lb. hamburger 3 Tbsp. butter or margarine 2 Tbsp. onions, chopped 1/4 c. flour 1 tsp. salt 1/8 tsp. pepper 1/8 tsp. paprika 2 c. milk 1 c. (4 oz.) shredded cheese 2 Tbsp. parsley flakes 5 c. potatoes, sliced In a 2 quart saucepan melt butter or margarine. Saute onions until tender. Stir in flour, salt, pepper and paprika. Remove from heat. Gradually stir in milk. Cook over medium heat, stirring constantly, until thickened. Cook for 2 more minutes. Remove from heat. Stir in cheese and parsley until cheese is melted. Layer half the potatoes in a buttered 2 quart casserole. Pour on 1/2 the cheese sauce. Place sliced franks or hamburger over sauce. Cover and bake at 350 degrees for 1 hour. Remove cover and bake an additional 15 minutes. Makes 8 servings.
