SPICY ORANGE BEEF 1 lb. beef flank or round steak 1/4 c. slivered orange peel 1 clove garlic, minced 1/2 tsp. ground ginger 2 Tbsp. cornstarch 1 c. cool beef broth 1/4 c. soy sauce 1/4 c. dry sherry 1/4 c. orange marmalade 1/2 tsp. dried red pepper, crushed Thinly slice beef on the diagonal. In wok or large skillet over medium high heat, add beef 1/3 at a time. Stir- fry 3 minutes or until browned. Remove beef from wok. Add orange peel, garlic and ginger; stir-fry 1 minute. Stir together remaining ingredients and pour in the wok. Add beef to wok. Stirring constantly, bring to boil over medium heat and boil 1 minute. Serve over rice. Makes 4 servings.
