SHE CRAB SOUP 3 Tbsp. butter 2 medium onions, chopped 1/4 tsp. mace 2 Tbsp. flour 1/4 tsp. paprika 1 large dark pepper 1/4 tsp. bay seasoning 3/4 tsp. salt 1 qt. half and half several dashes Worcestershire sauce 2 c. crab meat 1/2 c. cooking sherry Melt 3 tablespoons butter, add two medium chopped onions; simmer in butter don't brown. Mix in cup: 1/4 tea- spoon mace, 2 tablespoons flour, 1/4 teaspoon paprika, 1 large dash pepper, 1/4 teaspoon Old Bay seasoning and 3/4 teaspoon salt. Add this mixture to the onions and mix slowly. Add quart of half and half, several dashes (large) of Worcestershire sauce. Slowly cook until bubbles and boils. Stir slowly, constantly. Add 2 cups crabmeat when boiling, turn to simmer for 20 minutes and stir almost constantly on a low heat. Take off stove; add 1/2 cup cooking sherry.
