GARLIC SOUP (8 Servings) 3 Tbsp. vegetable oil 3/4 c. chopped onion 1/3 c. chopped celery 12 cloves garlic, halved 6 c. chicken broth 1/8 tsp. pepper 8 (1/2 oz.) slices Italian or French bread 1 c. shredded Cheddar cheese In large saucepan heat oil over medium-high heat. Add onion and cook, stirring occasionally 7 to 10 minutes until browned. Add celery and garlic. Cook, stirring, 8 minutes. Add chicken broth and pepper. Bring to boil. Reduce heat, cover and simmer 20 minutes. In container of blender or food processor, process soup in small batches until smooth. Preheat broiler. Sprinkle each slice of bread with 2 tablespoons cheese. Broil 3 minutes or until cheese is melted and bread is lightly toasted. Place 1 slice of bread in each serving of soup.
