FRESH TOMATO SOUP WITH BASIL 3 Tbsp. butter 1 large onion, sliced 1 carrot, shredded 1/2 c. packed fresh basil leaves 1 tsp. salt 3/4 tsp. sugar or 1/2 tsp. honey 4 large tomatoes, chopped (should be 4 c.) 14 oz. vegetable broth Melt butter and saute onion and carrot until onion is limp. Stir in tomatoes, basil, salt, sugar or honey. Bring to boil, stirring. Reduce heat. Cover and simmer 10 minutes. Cool slightly. Whip in blender until smooth. Add broth and reheat. Do not boil. Variations Soup: Pasta or rice can be added to this.
