HORSERADISH CREAM SAUCE 1/2 c. bottled white horseradish 2 Tbsp. fresh lemon juice or white wine vinegar 2 tsp. Dijon mustard 1/2 tsp. salt 1 tsp. white pepper or a pinch of cayenne 1 1/2 c. heavy cream or "Imo" (for dieters) Stir the horseradish and all other ingredients, except the cream, until well blended. Beat the cream with a whisk or rotary beater to soft peak stage. "Imo" will need to be thinned a bit. Fold horseradish mixture into the cream. This is great with prime rib.
