CANDIED CRANBERRIES WITH ORANGE RIND 1 c. sugar 1 c. water slivered rind of 1 orange 4 c. cranberries 3 whole cloves 1 small piece cinnamon stick Combine sugar and water in a saucepan; bring to a boil. Add the orange rind and cook the syrup until it begins to thicken. Using a slotted spoon, remove orange rind to a sheet of waxed paper and reserve. Add cranberries and spices to liquid in pan. Cook over low heat for about 6 to 10 minutes or until berries begin to pop. Remove berries to a bowl and continue cooking syrup until it is fairly thick. Discard cloves and cinnamon; pour syrup over berries. Chill and garnish with candied orange rind.
