SPANISH CORN SALAD

1 can whole kernel corn
1 onion, chopped
1 c. cucumber, cubed
3 shots Tabasco sauce
8 solid tomatoes
1 pimento, chopped
1 green pepper, chopped
1/4 tsp. cayenne pepper
lettuce leaves
mayonnaise

Select tomatoes of uniform size; scoop out centers. Mix
centers with corn, chopped pimento, peppers, onion, cucumber
and salt to taste. Add cayenne and Tabasco sauce; blend with
enough mayonnaise to hold together well. Fill tomato cups; top
with a teaspoon mayonnaise and a dash of paprika. Serve on
crisp lettuce leaves. Serves 8.
