BROCCOLI SOUP

4 Tbsp. butter
2 Tbsp. flour
1 (10 oz.) bunch fresh
broccoli
1 small onion, finely chopped
1 qt. chicken broth
1/2 c. milk or cream, warmed
salt and pepper

Melt butter; stir in flour. Cook 3 minutes over low
heat, stirring constantly. Cool. Wash and trim broccoli.
Chop broccoli into 1/2-inch pieces.
Saute onion in 2 tablespoons butter until tender. Add
broccoli; cover and cook 3 minutes. Add broth; heat to simmer-
ing. Stir a small amount of broth into flour mixture until
smooth and return mixture to broccoli, stirring until smooth.
Simmer, covered, until broccoli is tender, 30 minutes. Remove
broccoli and puree. Return to mixture. Add cream, salt and
pepper.
