MICRONESIAN FRUIT BAT STEW 4 medium Micronesian fruit bats 2 c. coconut milk 1 c. shredded coconut 2 large green bread fruits 3 large green papaya 3 large green mango 1 clove garlic 1 large onion 3 Tbsp. ground black pepper 1 Tbsp. Tabasco sauce 1/4 c. soy sauce Cut off wings and discard body. Cook bat wing in coconut milk. Bring to boil in pot. Slice bread fruit, papaya and mango and cook into pot after cooking in medium heat for 20 minutes. Chop onions and garlic and add to stew. Cook addi- tional 15 minutes. Take out bat wings; chop into small chunks and return to pot. Turn off heat. Add pepper, Tabasco sauce and soy sauce to taste. Serve over hot rice with shredded coconut over stew.
