SHRIMP CHEESE CHOWDER 2 c. onion, thinly sliced 2 Tbsp. butter 2 Tbsp. flour 1 1/2 c. water, heated 2 c. potatoes, peeled and diced 1 c. celery, sliced salt and pepper to taste 1 lb. cooked shrimp 2 c. milk 2 1/2 c. (10 oz.) shredded sharp Cheddar 2 Tbsp. sherry Saute onions in butter until tender. Slowly blend in flour. Stir in water, potatoes. celery and seasonings. Cover and simmer for 20 minutes or until potatoes are tender. Add remaining ingredients. Stir until cheese is completely melted. Taste for seasoning. Serves 6 to 8.
