POTATO SALAD 4 c. cut-up potatoes (approximately 6) 1/4 c. oil 2 Tbsp. vinegar 3 hard-boiled eggs 3 Tbsp. chopped onions 3/4 c. mayonnaise salt and pepper Cook potatoes in skin and cut up while still warm. Add oil and vinegar and onion and marinate in refrigerate for 1 hour. Then add mayo, salt, pepper and cut in 2 eggs. Lay 1 egg in quarters on top. For Ham and Potato Salad: Add 1 cup cut-up ham and 1/2 teaspoon mustard.
