COOKED SALSA 1 onion, chopped 1 small green pepper, chopped 1/2 c. chopped celery 1 clove garlic, minced 2 Tbsp. oil 1/4 tsp. oregano 1 bay leaf salt and pepper 1 (1 lb. 16 oz.) can tomatoes 1 (15 oz.) can tomato sauce Cook onion, green pepper, celery and garlic in oil until tender, but not browned. Add oregano, bay leaf and salt and pepper to taste. Add tomato sauce and bring to a boil. Reduce heat and simmer 15 minutes to blend flavors. Makes 1 quart sauce.
