LLAPINGACHOS
(Potato Hamburgers)
6 medium size potatoes
1/8 c. oil
1 Tbsp. butter
1/2 pkg. small Mozzarella
cheese
1/2 Tbsp. paprika
salt to taste

Peel potatoes and boil to a point similar to mashed
potatoes. In frying pan, mix butter with paprika; mix in
potatoes, add 1/2 tablespoon of oil. Mix cut cheese in small
pieces. Make ball similar to hamburgers. Put cheese in
center. Oil lightly frying pan at low to medium heat. Put
potato "hamburgers" to fry until it has a golden crust. Turn
them over and do same. Serve them hot. Should yield about 8
servings.
