KELEWELE (PLANTAIN OR BANANA APPETIZER) This is a spicy, tangy food which can be served in many ways. It is superb served with chili, perfect as a breakfast meal and fun for afternoon snacking. 3 lb. (6 large) plantains or bananas 1 tsp. powdered ginger 1/2 tsp. salt 1/2 tsp. ground red pepper 2 Tbsp. water 3 c. oil or shortening Wash and peel plantains or bananas and cut crosswise into 1/2-inch slices. Mix ginger, salt and red pepper with water. Drop plantain slices into mixture and stir around with fingers. Place in hot oil and deep-fat fry until golden brown. Serves 6.
